It's the weekend....
hey weekend is here, this week i'll try out two new flour to see which is better (if there's a difference in taste). I'm trying to make a basic loaf, polo buns and the tuna buns i made last week (got some good feedback).
Also i am trying out a new technique for the basic loaf. Basically, knead the dough for a bit, rest for a bit then knead it again. I'm at the initial stages now, i find it easier to knead the second time and become smoother faster. After resting for about 30 mins - 1 hour, i will roll it out to a flat piece and then fold it and repeat for 1 or 2 times (got this technique from www.danlepard.com). Since i got time to kill tonight i am gonna start kneading tonight and let it proof overnight. If you don't have time, i'll try to assess this technique after i finish baking to see if this is the way to better breads. Cheers for now.
